Warm weather has arrived which means it’s time to fire up the grill! The grill is no longer reserved for just steaks and hamburgers. If you follow a vegetarian lifestyle or are just trying to incorporate more meatless meals into your diet, there are plenty of vegetarian grilled options! Check out some of my favorites below!

Vegetarian Grilled Veggie Sandwich with Mozzarella and Balsamic Glaze

There are so many vegetables in season during the spring and summer months. Toss them in olive oil, salt, and pepper and grill them until soft, and slightly charred. Meanwhile, brush the cut side of a baguette with olive oil and grill to a slight char as well. Load those veggies onto your bread, along with a hearty slice of fresh mozzarella and a drizzle of balsamic glaze. Recipe is here!

BBQ Tofu

Tofu is a versatile protein because it takes on whatever flavor you put on it. If you’ve never worked with tofu before, you have to drain it and let it sit on paper towels to remove excess moisture (check out this video!) For maximum flavor, cut tofu into 1-inch cubes and marinate in your favorite BBQ sauce. Thread cubes onto skewers and grill until heated through and charred. Find this easy recipe here.

Avocado stuffed with Caprese Salad

Have you ever grilled an avocado? Place the avocado cut side down onto the grill until hot and nicely charred (can you tell yet that it’s all about that good char?). Remove the avocado from the grill and top with diced tomatoes, mozzarella, and chopped basil, and drizzle with balsamic glaze. Check our the recipe here.
