I’m sure it is no secret by now that the REBEL dietitians love to meal prep! Meal prepping makes getting dinner on the table easy, and quick! But what happens when you have a busy weekend or you go on vacation and return just in time to go to work on Monday morning? We came up with 6 delicious, healthy 30 minute meals, especially for the days were meal prep just wasn’t an option.

If you are looking for other quick meals, try any of these recipes that are taste like they took some effort, but are quick and easy (shhh, we won’t tell anyone!). You can also look at this blog where we turn 5 different proteins into 25 meals. Either way, a 30 minute meal is a great option for any day of the week, when time is short and hunger is brewing! I ask our dietitians what their favorite 30 minute meals are, and the results are in!

Rebecca loves these Indonesian chicken pita sandwiches, they are a hit with her whole family! You can also switch it up and make similar Indonesian chicken using Justin’s Almond Butter.

Alex uses canned tuna to make this quick and easy Spinach and Tuna Pasta when she is short on time.

Kaitlin will break out the seafood for some delicious Chile-Lime Shrimp Tacos or go Italian with Pasta with Italian Sausage and Veggies.

As for me? I would rather make my own Beef Lo-Mein than order take out (lower on sodium, and way more delicious!). Or make this easy 30 minute Skillet Lasagna when I don’t want to stand in front of the stove all day.
