What is Tagine?
Looking for a new vegetarian recipe using a wide variety of vegetables, have you tried root vegetable stew? The word Tagine can mean “stew” or the pot (African clay cookware) used to prepare it. Trying new recipes is a great way to improve your food intake. It is especially beneficial when you try a recipe with lots of vegetables like this one. Quick and easy recipes like this one are good for helping manage many conditions including heart disease, digestive difficulties, diabetes and PCOS.
Moroccan Root Vegetable Stew AKA Tagine
This is a Moroccan dish that is impressive and easy in spite of the long list of ingredients. It takes a while to chop the veggies but chopping vegetables can be relaxing especially if you are among friends and family or listening to music. It fills a large skillet (or dutch oven) and makes fabulous planned leftovers! This recipe is easily doubled or tripled to feed a crowd.
Mix together and set aside:
1/2 t. EACH salt, cumin, paprika
1/4 t. EACH cinnamon, turmeric, curry powder, pepper
1/8 t. EACH ground red pepper, allspice
In a Dutch oven combine root vegetable stew ingredients:
1 T olive oil
3 c. chopped cabbage
2 c. cubed sweet potatoes
1 c. EACH of chopped onion, parsnip, carrot, turnip, dried lentils
1/2 c. chopped dried apricots
1 T minced ginger root
Cook for 3 minutes
Add spice mixture.
Cook for 1 minute stirring constantly.
Add:
2 t. grated lemon rind
28 oz (about) vegetable broth
28 oz (about) diced tomatoes
Simmer uncovered for 40 minutes or until lentils are tender.
Stir in
1 T. lemon juice
Optional: Serve over hot cooked couscous or brown rice.

Recipe tips:
If you have a food processor, it makes the chopping easier. Also, in a pinch, you can substitute Trader joe’s steamed lentils for the dried lentils, just put them into the stew a few minutes before serving to warm them up. Grocery store notes, commonly use 1 large sweet potato, 3-4 parsnips, 1-2 turnips in recipe
