I LOVE peanut butter. As in, I basically have to eat it every single day in some shape or form. I’ll spread it on toast, eat it with fruit, plop it on yogurt or oatmeal, or I’ll just eat it by the spoonful! Crunchy, creamy, flavored with chocolate or sprinkled with cinnamon…I’ll eat it all! It’s also a great option to add protein and fat to your meal or snack. In honor of this wonderful holiday, I have gathered a collection of delectable ways to enjoy peanut butter!

Savory Sweet Potatoes

You may be scratching your head over this one. My parents think I’m strange for doing it. But seriously, spread peanut butter over a piping hot sweet potato. You can even add a sprinkle of cinnamon. It is so delicious! I usually bake a bunch of small sweet potatoes on Sunday, and then eat them throughout the week for snacks.
