Ingredients
Chicken
  • 8-16 chicken boneless, skinless thighs, cut into small pieces or strips
  • 1 pkg skewers
Satay Marinade
Peanut Sauce

Chicken Satay
  1. Cut chick into thin pieces or strips and place in a bowl.
  2. Place all marinade ingredients in a food processor (discard the upper stalk of the lemongrass, if using fresh). Blend well.
  3. Taste-test the marinade. The strongest tastes should be sweet and salty in order for the satay to taste its best.
  4. Add the marinade to the meat and stir well to combine. Allow the chicken to marinate for at least 1 hour.
  5. When ready to cook the satay, slide the chicken pieces onto the wooden skewers.
  6. Barbecue the satay (or grill) until the chicken is cooked through. Serve with peanut sauce for dipping. Enjoy!
Peanut Sauce
  1. Place all of the ingredients in a blender and blend until smooth.
  2. Serve as a dipping sauce for chicken satay, fresh vegetables, spring rolls, or even mix with Thai noodles! Enjoy!
Recipe Notes

Tip: soak the wooden skewers in water overnight so they don't burn on the grill.
