  1. Rinse zucchini and noodle-fy the zucchinis by using a spiralizer, mandoline, julienne peeler, or a standard vegetable peeler (for wide noodles).
  2. Place paper towels on bottom of a baking sheet and evenly spread out the cut zucchini on top.
  3. Sprinkle with salt, place paper towels on top, and let sit for 20 minutes (you might need to replace drenched paper towels).
  4. While waiting, drain and chop the tomatoes, mince the garlic, and grate the parmesan (if not already).
  5. After 20 minutes have passed, pat the zucchini with a paper towels to remove as much water as possible.
  6. In a large skillet, add the olive oil, garlic, and red pepper flakes and bring to medium heat. After a minute or two, when the oil begins to bubble around the garlic, add the zucchini noodles.
  7. Cook the noodles in the pan for 5-6 minutes, tossing with tongs frequently.
  8. Next, mix in the tomatoes, parmesan, and basil. Cook for another minute or two. Enjoy!
