  1. In a large pot, heat olive oil over medium high heat.
  2. Add green onion and ginger to hot olive oil and cook for 1-2 minutes
  3. Remove pot from the heat and stir in flour until smooth. Slowly add in the stock and stir constantly to avoid getting lumps.
  4. Add pumpkin to broth. Then add curry powder, turmeric, salt, pepper, coriander and red pepper flakes.
  5. Bring soup to a boil, reduce heat to simmer and cook for 5 minutes more.
  6. Slowly add coconut cream and cook for 2 minutes.
  7. Serve and enjoy.
