  1. Heat grill to medium heat.
  2. Drizzle 1 teaspoon of olive oil over the vegetables. Mix around until all of the vegetables have been coated with the oil.
  3. Place vegetables on grill, flip occasionally until vegetables are tender and slightly charred, about 10-15 minutes.
  4. Remove vegetables from the grill. Cut each mushroom cap into quarters. Slice zucchini coins in half if large pieces. Cut peppers into bite sized pieces.
  5. Drizzle 2 teaspoon balsamic vinegar and 1 teaspoon olive oil over the vegetables. Season with salt and pepper to taste. Add more balsamic vinegar if desired. Can we served warm or at room temperature.
