  1. Preheat oven to 375 degrees F. Toss sweet potato in olive oil, salt, and pepper and spread out on a cookie sheet. Roast for approximately 30 minutes, until soft and golden brown.
  2. In a microwave-safe bowl, microwave kale for 30 seconds. Place kale, dressing, pecans, cranberries, and quinoa in a bowl and mix to combine. Add a pinch of salt, and stir in the roasted sweet potato.
