Instructions
  1. Cream together butter, white and brown sugar in a bowl until smooth.
  2. Add peanut butter, egg, and vanilla. Mix well and scrape down sides of the bowl.
  3. Add flour, baking soda, and salt, mixing just until incorporated (be careful not to over-mix).
  4. Scoop dough into balls using an ice cream scoop (or a spoon). Roll cookie dough balls in white sugar.
  5. Place cookies on a greased cookie sheet and using your thumb, poke a hole (not all the way through) in the center of each cookie.
  6. Using a spoon, carefully fill each cookie with some jelly or jam.
  7. Bake at 350 F for 10-12 minutes, or until just set. Let the cookies cool for 5 minutes on the cookie sheet before removing cookies to a cooling rack.
