Salmon cakes are always a favorite of mine! Check out our Mayhem to Mealtime video on how to prepare them! I've changed up the recipe a little, using sweet potato and adding sweet chili sauce. They're too good to pass up! You can even make a big batch and then freeze the rest for later.

  1. Pierce sweet potato with a fork and wrap in a paper towel. Microwave until fully cooked, 5-7 minutes. When cool enough to handle, scoop out flesh of sweet potato and place in a medium sized bowl.
  2. Place 1 tsp canola oil in pan over medium heat. Add onion and cook until softened, 5-6 minutes. Let cool, then add to bowl with sweet potato. Add Greek yogurt, egg, and chili sauce to bowl and stir until well combined.
  3. Form salmon mixture into patties. In a shallow dish, combine breadcrumbs, salt, and pepper. Coat each patty with breadcrumb mixture.
  4. Place 1-2 Tbsp canola oil in a large pan over medium heat. Working in batches, cook patties until golden brown on both sides. Serve with rice and your favorite vegetable.
