Tomato Eggplant Chicken
This tomato eggplant chicken recipe is allergen free!
  1. Pour 1 tbsp of olive oil into a pan. Cook the chicken breast cubes until browned over medium heat.
  2. Add the eggplant cubes and diced onion to the pan. Saute until warm and softened.
  3. Add the canned diced tomatoes and spinach to the pan. Continue to stir on medium heat.
  4. Stir in basil and garlic. Enjoy!
