Salad Dressing
  1. Combine the ingredients in a small food processor or blender and blend until smooth. Pour 2 tablespoons of dressing into a washed and dried wide mouth mason jar.
Salad
  1. Peel and spiralize zucchini to make zucchini noodles. You should end with about 2 cups of noodles.
  2. Layer the diced vegetables on top of the salad dressing. Top with corn, goat cheese, and then the zucchini noodles.
  3. When ready to serve, give the jar a good shake and then pour the salad out onto a plate. Enjoy!
Recipe Notes
  1. Adjust the amount of each ingredient based on size of the mason jar. 
  2. When preparing this salad, it is important to layer the ingredients correctly. Always place moist or wet ingredients on the bottom. This ensures your salad doesn't get soggy. Your hearty vegetables or protein should go next, then layer away and top with the lettuce! 
  3. If you have anything you want to stay crunchy, put it on the top of the salad or place it in a separate baggie.
