Baked Sweet Potato Fries
Sweet potato fries have swept the nation, and for good reason! But why not make this delicious side dish at home, baked in the oven, to preserve all those nutritional benefits!

1 large sweet potato 2 tsp olive oil Salt to taste
Preheat oven to 400°F.
Rinse and scrub sweet potato, then dry thoroughly.
Carefully cut sweet potato lengthwise to make ½ inch slices. Then cut each slice lengthwise to create 1/2 inch fries.
Place uncooked fries in a bowl and toss in olive oil and sprinkle with salt.
Bake fries for 30-40 minutes, turning occasionally, until golden brown.
