Ingredients

  • 1 large sweet potato
  • 1 lb brussels sprouts
  • 2 apple Granny Smith
  • olive oil
  • 1 lb chicken sausage links, sliced
  • cinnamon

Method

  1. Wash, peel, and chop the sweet potato. Cut the brussel sprouts in half and chop the apples into bit sized pieces.
  2. Heat about 1 tablespoon of olive oil in a pan. Sauté sausage until browned.
  3. Add the sweet potatoes to the pan and let cook for 8 minutes. Add the Brussel sprouts and let cook for an additional 5 minutes or until the sweet potatoes and Brussels sprouts are soft. Add cinnamon to taste and enjoy!
