Ingredients

  • 1-3/4 cup almond flour
  • 3/4 cup coconut sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp ginger
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp vanilla extract
  • 1/2 cup raisins
  • 1/2 cup pecans
  • 15 oz pumpkin puree canned
  • 4 tbsp honey
  • 3 tbsp almond milk or more if needed for consistency

Method

  1. Preheat oven to 350°F.
  2. Mix together ingredients in large bowl and pour into greased baking dish.
  3. Bake for 60 minutes until a toothpick comes out clean.
  4. Let cool before slicing.
