Ingredients

  • 1 lb chicken diced
  • 1/4 cup sweet chili sauce
  • 1/8 cup soy sauce
  • 1 cup pineapple crushed
  • 1/4 tsp Red pepper flakes
  • 1 clove garlic crushed
  • 1 inch piece ginger grated
  • 1 medium onion sweet onion, diced
  • 1 bell pepper red, chopped
  • 2 tsp corn starch
  • 2 cups rice or quinoa; cooked
  • cilantro

Method

  1. Place all ingredients, except cilantro, in crockpot over low heat for 4 hours.
  2. Check at 4 hours if chicken is cooked through and has reached an internal temperature of 165 degrees.
  3. If desired, mix 2 tsp cornstarch with 1 Tbsp cold water and add to crockpot. Stir and let sauce thicken. Serve over rice or quinoa and sprinkle with cilantro.
