Preheat oven to 350°F. Or you can preheat your air fryer to 400°F.
Add cauliflower, broccoli and carrots to food processor. Pulse until finely ground.
Add ground chicken and process until mixture is smooth. Add eggs, salt and pepper and mix well. Form into nugget shapes.
Set our 3 shallow dishes. Place flour in 1 dish. Place egg and whisk in 3/4 cup water in another dish. Finally, place panko breadcrumbs in the last dish.
Dip each nugget into flour, then egg mixture, then breadcrumbs.
Place on greased baking sheet, and bake for 20 minutes at 350°F, then flip over, and bake for another 20 minutes until done.
If you are making your nuggets in the air fryer, place nuggets in the air fryer basket, and spray with cooking spray. Fry at 400°F for 7 minutes, flip nuggets in basket, spray again with cooking spray and fry for another 7 minutes until done.
Serve with your favorite dipping sauce.
