Beef and Sweet Potato Chili

Ingredients

  • 1 tbsp vegetable oil
  • 1 cup onion diced
  • 1 lb beef ground, lean, like 90/10
  • 3 bell pepper diced
  • 3 cups sweet potato or butternut squash
  • 1 can canned tomatoes diced, no salt added
  • 1 can black beans low sodium, rinsed and drained
  • 2 tbsp tomato paste
  • 2 tbsp hot sauce
  • 1 tbsp cumin
  • 2 tsp chili powder
  • 1 tsp oregano
  • 1-1/2 cup water

Instructions

  • Use saute function on electric pressure cooker to cook onions (in oil) until translucent
  • Add ground beef and break up with spoon. Cook until browned.
  • Turn off saute function and add remaining ingredients.
  • Close IP and cook on high pressure for 15 minutes, then let the pressure release naturally for another 15 minutes.
  • Remove top, and if desired, resume saute function to reduce liquid
