Gluten-Free Gingerbread Cookies (grain free, dairy free)

Ingredients

  • 2 2/3 cups almond flour
  • 2 tsp ground ginger
  • 1/2 cup sugar of choice
  • 1 tsp baking soda
  • 3/4 tsp cinnamon
  • 1/2 tsp cloves
  • 1/4 tsp salt
  • 7 tbsp butter softened; vegan/plant based if dairy free
  • 1 egg
  • 2 tbsp water
  • 3 1/2 tbsp honey
  • 4 tbsp sugar of choice

Method

  1. Mix together almond flour, ginger, sugar, baking soda, cinnamon, clove, and salt. ⁣⁣⁣⁣⁣⁣
  2. In a separate bowl, mix butter, egg, water, and honey. ⁣⁣⁣
  3. Stir the dry mixture into the bowl containing the wet mixture. ⁣⁣⁣Don't over mix.
  4. Shape the dough into balls and roll them in sugar. ⁣⁣⁣
  5. Place the cookies on a baking sheet.⁣⁣⁣
  6. Bake at 350°F for 10 minutes.
