Whisk together tahini, olive oil, lemon juice, maple syrup, and salt. As you whisk, the dressing will start to seize. Slowly add water 1 Tbsp at a time and continue to whisk until dressing reaches thinner, creamy consistency.
Use dressing as desired.
Store excess dressing in air tight container in fridge. You can add more water and whisk if too thick after refrigeration.
