In a mason jar layer, 1 1/2 cups flour, 1 1/2 tsp pumpkin pie spice, 1/2 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp salt, 1/3 cup brown sugar, 1 cup white sugar, 3/4 cup dried cranberries and 1/2 cup rolled oats.
Close mason jar well.
To prepare the bread:
Preheat oven to 350° F.
Mix pumpkin puree, eggs, and canola oil until well combined.
Add dry ingredients from jar to the wet ingredients. Stir until just blended.
Spray a loaf pan with cooking spray. Pour batter into loaf pan and bake for 45-50 minutes until a toothpick comes out clean.
