Pineapple Ginger Shrub Mocktail

What is a shrub, you ask? A vinegar-based beverage, typically mixed with spirits, water, or seltzer. Add a little pineapple and fresh ginger and you have yourself a spicy, satisfying drink!

Ingredients

  • 1-1/2 cups pineapple juice
  • 2 inch ginger peeled and roughly chopped
  • 1/2 cup apple cider vinegar
  • 2 cups seltzer water

Instructions

  • Combine pineapple juice and ginger in a blender. Blend until smooth.
  • Pour pineapple ginger mixture into a pitcher through a fine mesh sieve. Use the back of a spoon to help push the liquid through. Discard the pulp.
  • In a pitcher, combine pineapple ginger mixture, apple cider vinegar, and seltzer. Serve over ice.
