It is no secret that I am in love with my slow cooker. Seriously! It may be the best thing since sliced bread. You can make so many different things, and it takes no time at all. I am a huge fan of the fix it and forget it method of cooking.

Mostly because it means that I can watch Grey’s Anatomy reruns on a rainy Sunday afternoon, while still making sure my meal prep gets done. But sometimes, things can stand in the way of meal prep, even if the slow cooker is involved. I wanted to find a way to make sure that I ALWAYS have something on hand to toss in that bad boy, put on low, and let it go.

And thus, these freezer meals were born.

These recipes are also a great use for any food that you may have purchased too much of, or is getting ready to go bad. You can chop the ingredients up, throw them together in a bag, and defrost at another time to have an easy meal, ready for the slow cooker! A great way to reduce food waste! Much better than throwing out perfectly good produce that you just don’t get around to eating!

These meals are so easy. As mentioned before, all you have to do is throw these guys together into giant zipper lock bags, and stick in the freezer. When you are ready to use them, defrost them overnight, and dump everything in the slow cooker, and dinner is as good as done. These meals are chock full of veggies, and are so delicious! And did I mention how easy they are?

And don’t feel like you have to save these for just meal prep, or when you have a busy week. These make a great addition to care packages for your favorite college student or can be taken with you on vacation so that you can have a delicious meal, with minimal prep.

But don’t take my word for it, try them yourself! You can make all four, or make multiple of the same one! Either way, you will be all set and ready for meal time. These recipes are extremely versatile, so feel free to play around with different proteins with each of the recipes.

This is perfect on a cold day. The hardest part is going to be browning the turkey before you put it in the bag. Other than that, you are good to go! Feel free to use low sodium chili seasoning mix to speed up the process of assembling your freezer bag. Get the instructions here

If there is one thing I love more than my slow cooker, it is Mexican food. So Mexican food that I can cook in a slow cooker? Basically heaven. Feel free to save yourself some time by using low sodium fajita or taco seasoning instead of the spices listed in the recipe, which is located here
