Almond Crusted Chicken

Ingredients

  • 4 chicken breasts (3-4 oz each)
  • 1 cup almonds unsalted
  • 2 tsp rosemary dried
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 1/4 cup parmesan cheese
  • 1/2 tsp salt
  • Black pepper

Instructions

Oven

  • In a food processor, mix almonds, rosemary, onion powder, garlic powder, and parmesan cheese. Process until mixture becomes fine and crumb-like.
  • Preheat oven 350° F.
  • Make sure to dry the chicken breasts well, and season both sides with salt and pepper if desired. Dip the chicken into the almond crumb mixture, allowing the almond mixture to coat both sides. Repeat with all remaining chicken breasts.
  • Prepare a sheet pan by spraying with cooking spray. Place chicken on sheet pan. Bake for 20-25 minutes until chicken is done (internal temperature of the chicken should be 165° F). Serve chicken with a starch and a veggie.

Air Fryer

  • In a food processor, mix almonds, rosemary, onion powder, garlic powder, and parmesan cheese. Process until mixture becomes fine and crumb-like.
  • Preheat air fryer at 360° F for 3 minutes.
  • Make sure to dry the chicken breasts well, and season both sides with salt and pepper if desired. Dip the chicken into the almond crumb mixture, allowing the almond mixture to coat both sides. Repeat with all remaining chicken breasts.
  • Spray air fryer basket with cooking spray. Place chicken in an air fryer and fry for 5 minutes. Flip chicken, and cook for an additional 4-5 minutes until chicken is done (internal temperature of chicken should be 165° F). Serve chicken with a starch and a veggie.
