I love pizza and will take pretty much any flavor combination and make it into a pizza. I had just made my Delicata Squash Salad with Cranberry Balsamic Dressing and I had extra cranberry sauce and goat cheese. Well that sounds like the perfect Fall pizza to me. Flatbreads (or basically pizza) are a great option for a party appetizer but can also be the star of a weeknight meal.

What You’ll Need

  • Pre-made thin pizza crusts, like Brooklyn Bred
  • Canned whole berry cranberry sauce
  • Orange zest
  • Fresh thyme
  • Goat cheese

Why Make Goat Cheese Cranberry Flatbread?

As I said before, it can be a great appetizer to serve at a party. However, if you have leftover cranberry sauce, this can be an easy way to use it up and have a tasty dinner out of it. To round this out as a balanced meal, I would add a vegetable side dish like a salad or your favorite roasted non starchy vegetables. 

Can I use a different pizza crust?

I like the long flatbread style crusts when this is being presented as an appetizer because it is visually appealing. However, you can change it up based on your preferences! And if you are just having this as a meal, you can choose whatever crust you prefer. If you have blood sugar concerns or cholesterol concerns, choosing a different pizza crust that has more fiber would be beneficial. Whole wheat crust, whole wheat naan or pita, cauliflower crust, or chickpea crust are some options that would have more fiber. 

Make Ahead/Storage

If this is being served as an appetizer I would definitely try to serve immediately so the texture of the crust is not affected. It is best fresh. However, you can definitely store in the fridge and reheat as needed for leftovers. It will keep in the fridge for 3-4 days. For best results, reheat in a toaster oven or air fryer!

Cranberry Goat Cheese Flatbread with Thyme

Ingredients

  • 4 pre-baked pizza crusts Like Brooklyn Bred Thin Crust Pizzas
  • 1 can cranberry sauce whole berry
  • 1 tsp orange zest
  • 1 Tbsp thyme chopped, plus additional for garnish
  • 8 oz goat cheese

Instructions

  • Preheat oven to 425° F. Lay the pizza crusts out on 2 baking sheets.
  • In a small bowl, combine cranberry sauce, orange zest, and thyme. Spread cranberry mixture evenly onto pizza crusts. Crumble goat cheese and sprinkle over cranberry sauce. Sprinkle with additional thyme.
  • Bake until cheese is melted and crust is crispy, about 15 minutes. Let cool slightly before cutting and serving. Enjoy!
