What is Gluten?

Gluten is a protein found in wheat, rye, barley and triticale that many people limit or avoid due to digestive concerns, Celiac disease, or personal preference. While gluten is in a large number of our grain products (bread, pasta, crackers, etc), there are grains and other foods that are naturally gluten free. I have gathered some of my favorite gluten free potluck ideas that can also be great dinner sides/main courses. If you are going to an event that you will need to reheat your food, ask ahead if the oven will be in use. If so, opt for a cold dish instead such as a salad!
